If you crave something sweet at breakfast, but don’t want to load up on carbs and miss out on protein, this recipe is stacked in your favor. Made from rich almond flour and sweetened with banana, these pancakes definitely fit your macros. Top them with almond butter for an extra dose of healthy fats, or add a few dark chocolate chips to really up the mmm-factor.

Almond & Banana Protein Pancakes
Total time: 15 min
Makes 1 serving

Non-stick cooking spray
1 medium banana, mashed
1 large egg
2 Tbsp almond meal (flour)
1/2 scoop vanilla protein powder
Optional toppings:
1 Tbsp almond butter and/or maple syrup and sliced almonds
1. Heat a medium skillet over medium heat and spray with cooking oil.
2. Mix all remaining ingredients in a small bowl, whisking until smooth.
3. Pour 2 Tbsp of batter per pancake onto the pan; cook approximately 1 minute and flip,
cooking for an additional minute on the opposite side.
Serve with almond butter and sliced almonds, if desired.
