
This sweet side dish is the perfect wing-man to any muscle-building main. Packed with raw nutrients and tons of flavor, you can pull it together in 10 minutes tops. A combo of sweet and salty but without a drop of dressing, this salad is a definite crowd pleaser among health-conscious dinner guests.
Tip: If you don’t have any ripe watermelon, you could sub in mango chunks or sliced strawberries.
Arugula, Watermelon & Feta Salad
Total time: 10 min
Makes 5 servings
7 cups arugula
2 cups raw nuts, chopped
½ medium watermelon
1/3 cup feta cheese
1. Make right before serving so the arugula stays crisp. Remove the rind from the watermelon and cut flesh into bite-sized cubes, removing the black seeds.
2. Place all ingredients in a large bowl and mix gently. Serve immediately.
