Eating outdoors is more than just a great way to celebrate warm weather. Spending time in the fresh air can have health benefits, too, like lowering cortisol and feelings of stress, providing vitamin D, and letting you unplug from technology to connect with family and friends over a delicious meal. So keep things simple with this summer-perfect taco recipe created by blogger and fellow foodie Laura Tully of @phenomenalphoods.

Grilled Fish Tacos with Tropical Fruit Salsa

Prep Time: 20 Minutes  •  Total Time: 30 Minutes  •  Makes 4 Servings


For the salsa:
  • ½ cup tropical fruit such as pineapple or mango, peeled and diced
  • 2 bell peppers (any color), diced
  • 1 jalapeno, seeded and diced
  • 2 green onions, sliced
  • 1 Roma tomato, diced
  • Juice of 1 lime
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ¼ tsp red pepper flakes

Combine all ingredients, then cover and chill until ready to serve.


For the fish tacos:
  • 1 lb white fish like tilapia, cod, or mahi mahi
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp red pepper flakes
  • ½ tsp garlic powder
  • Olive oil, for brushing
  • Corn tortillas
  • Avocado, cilantro, jalapenos, etc. for serving.

1. Preheat oven to 425℉ or grill to medium-high heat.
2. Combine the spices in a small dish.
3. Brush each fish fillet with olive oil and rub with the spice mixture.
4. Bake in the oven for 10 minutes, or grill on a piece of foil until the fish flakes with a fork.
5. Heat tortillas for 20-30 seconds each side on a pan over high heat or directly on the grill to char.
6.  Top each tortilla with some of the fish, salsa, sliced avocado, and any other toppings you like such as fresh cilantro, lime wedges, and jalapeno slices.
