TIRAMISU BREAKFAST PARFAIT

Prep time: 15 min  •  Total time: 2 hour 15 min (can be made the night before)
Makes 1 serving
First layer:
• 1/3 cup rolled oats
• 2 tsp unsweetened cocoa powder
• 1/4 tsp cinnamon
• 1/2 cup water
• 1/2 tsp vanilla extract
• 1/4 cup strong brewed, cooled coffee
• Stevia to taste
Second layer:
• 6 oz plain Greek yogurt
• 1/2 scoop vanilla protein powder
• 1/4 tsp cinnamon
• Dash nutmeg
• Stevia to taste
Optional topping: ground cinnamon
1. In a small microwave bowl, combine oats, cocoa, cinnamon, water and vanilla and microwave until liquid is almost absorbed, approximately 2 minutes.
2. Stir in coffee and stevia and refrigerate a minimum of 2 hours (or overnight).
3. When ready to eat, combine yogurt with remaining ingredients in a separate bowl.
4. Assemble the parfait: layer a spoonful of the oat mixture alternately with the yogurt mixture.

Sprinkle additional cinnamon on top, if desired.
