Crazy mornings call for fast breakfast solutions—and no, we don’t mean a pit stop at the golden arches. This microwaved meal-in-a-mug is good enough to hold you until your next meal and won’t result in greasy wrappers on the floor of your car. Pair with a protein shake or fruit smoothie for a complete-but-quick breakfast.
Total Time 10 minutes
Makes 1 serving
1 large egg white
1 whole egg
2 tbsp unsweetened applesauce
¼ cup mashed banana
¼ tsp cinnamon
1/8 tsp nutmeg
1/3 cup fresh raspberries
1. Whisk all ingredients together in a microwave-safe mug or small glass bowl.
2. Microwave on high for 4 minutes. Top with fresh berries (peanut butter is also tasty).
